Vegan Lentil and Vegetable Curry
Ingredients:
1 cup dried lentils, rinsed and drained
2 tablespoons coconut oil
1 onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 cup chopped carrots
1 cup chopped bell peppers
1 cup chopped zucchini
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
2 cups vegetable broth
Salt and pepper to taste
Fresh cilantro, chopped, for garnish
Instructions:
In a large pot, heat the coconut oil over medium heat. Add the onion and sauté for 5 minutes until soft and translucent.
Add the garlic and ginger and sauté for another minute until fragrant.
Add the cumin, coriander, turmeric, smoked paprika, and cayenne pepper and stir well to combine.
Add the chopped carrots, bell peppers, and zucchini to the pot and sauté for 5 minutes until slightly softened.
Add the lentils, diced tomatoes, coconut milk, and vegetable broth to the pot and stir well to combine.
Bring the curry to a simmer and cook for 30-40 minutes, stirring occasionally, until the lentils and vegetables are tender and the curry has thickened.
Season with salt and pepper to taste.
Serve the curry hot, garnished with fresh cilantro.
